Caramels

From the kitchen of: Rigby 9th Ward

Cut little pieces of wax paper ahead of time. Also, cutting the caramel with kitchen scissors os quicker than a knife.

2 cups sugar
1/2 cup butter
2 cups whipping cream (heavy)
3/4 cups corn syrup

Grease bottom and sides of 8 or 9 inch glass baking pan with butter.

In a heavy 3 qt saucepan, heat all ingredients to boiling over medium heat, stirring constantly. Boil uncovered about 35 min, stirring frequently to 245 degrees or until firm ball shape. Immediately spread in baking dish. Cool completely about 2 hours.

Cut into 1 inch squares. Wrap individually in waxed paper or plastic wrap. Store in air tight container.
