1 3/4 cup flour
1 TBS baking powder
1/4 tsp salt
2 egg yolks
1 3/4 cup milk
1/2 cup oil
2 egg whites
Combine dry ingredients.
In a separate bowl, beat egg yolks slightly, then beat in milk and oil.
Add yolk mixture to the dry mixture. Stir until combined, but lumpy.
In a separate bowl, combine egg whites until stiff peaks. Gently fold into flour mixture. Do not over mix.
Pour batter onto waffle iron.
Can be frozen after cooked and reheated in the toaster.
