Best Banana Bread EVER!

Derived from All Recipes, but I made it even better!
Ingredients
  1. 2 eggs, beaten
  2. 1/3 cup buttermilk or yogurt
  3. 1/2 cup vegetable oil or apple sauce
  4. 1 cup mashed bananas
  5. 1 cup white sugar
  6. 1/2 cup brown sugar
  7. 1 3/4 cups all-purpose flour
  8. 1 teaspoon baking soda
  9. 1/2 teaspoon salt
  10. 1/4 teaspoon cinnamon
  11. 1/2 cup chopped pecans (optional)
Directions
  1. Preheat oven to 325 degrees F (165 degrees C). Spray one 9x5 inch loaf pan with non-stick spray coating.
  2. Blend together the eggs, buttermilk, oil and bananas.
  3. Sift together the sugar, flour, baking soda and salt. Add to banana mixture and stir in pecans. Mix well.
  4. Pour into prepared loaf pan and bake 1 hour and 20 minutes or until a cake tester inserted in the center comes out clean.
Tips
Butter pans and sprinkle with sugar to get a crispy shell and moist bread inside.
Also sprinkle a mixture of sugar, cinnamon, nutmeg, and finely chopped nuts on top of your dough before baking.
Frosting for top:
Take 4 oz. of room temp cream cheese, beat it together with 3T milk until smooth. Add 1 cup of powdered sugar and 1/2 t. vanilla and mix until incorporated. Drizzle this over your banana bread when it's done, take a bite and you will swear you've died and gone to heaven.

Oh ya! These really are SO good! (I made them into muffins instead of a loaf...made 14 muffins and baked for about 20 minutes.) I didn't even get a chance to make the frosting recipe before they were gone! Shoot, I'm gonna have to make them again! :)
